Teriyaki (Grilled fish or meat with sweet soy sauce)


Material

Fish (Tuna is best) or meat (we usually use Chicken in Japan)

Oil, Salt, White pepper

Soy sauce

Mirin (Sweet Sake, can be replaced with Sake with sugar)

Method

1. Season the fish or meat with salt and white pepper.

2. Prepare Teriyaki sauce by mixing Soy sauce and Mirin by 1:1. (If in case Mirin is not available, mix Soy sauce and Sake by 1:1, then add some sugar as much as you like)

3. Heat a fry pan and grill it with some oil.

4. If it is well-done, pour the Teriyaki sauce into the pan.

5. After a while, remove the fish or meat out of the pan.

6. Boil down the Teriyaki sauce until it becomes dense.

7. Serve the fish or meat on the dish and dress it with Teriyaki sauce.

Advises and comments

1. Teriyaki means Shining Grill, as the surface of the fish or meat looks as if shining with Teriyaki sauce.

2. Grilled Paprica, Polo leek and mushrooms with salt and pepper can be garnished.

3. Originally, Teriyaki is grilled on a chacole stove like we do at barbecue. This makes the taste much better as the Teriyaki sauce will be crispy and smell nice. In this case, grill it on a skewer and put the Teriyaki sauce by a clean cooking brush on the surface of it after it got well-done.

4. Rolled beef slices with some vegitable (Polo leek, French beans, carrots and what ever you like) inside can be cooked in similar way. This is also delicious.
